Tim Mälzer in Östersund (Sweden): Anton Schmaus sends Tim Mälzer to Östersund, Sweden. This comes from a good friend of Anton Schmaus: the Swedish chef Elaine Asp, who specializes in traditional dishes from the Sami, the indigenous people of Scandinavia.
